Strawberry and Banana Chocolate Cheesecake Pancakes

I don’t know if this one can truly be called a recipe, but these assembly instructions created a delicious breakfast treat I just had to share. Let me know what you think.

Ingredients:

  • Gluten-Free Pancake Mix (I used King Arthur’s Gluten Free Pancake Mix)
  • Chocolate Chips
  • Cream Cheese
  • Fresh Strawberries
  • Fresh Banana
  • Whipped Cream

Directions:

  1. Make your gluten-free pancakes following the instructions on the mix you are using. Add the desired amount of chocolate chips to half the pancakes.
  2. Slice the strawberries and bananas.
  3. Take a chocolate chip pancake and top with a layer of cream cheese. Stack a plain pancake on top, cover with strawberries, bananas, or both. Finish with whipped cream.
  4. Serve and enjoy!

Gluten-Free Avocado Toast

Gluten-Free Ciabatta Avocado Toast

I really wanted avocado toast, but realized I didn’t have any gluten-free bread that would be traditionally used for toast. What I did have was Schar’s Ciabatta rolls. I decided to give it a try, and the result was delicious! There are so many ways to make avocado toast, but this is one of my favorites. Give it a try and let us know what you think.

Ingredients:

  • 1 Gluten-Free Ciabatta Roll (I used a Schar Ciabatta Roll)
  • 1 Medium Avocado
  • 2 Eggs
  • 3 Slices of cooked Bacon
  • Everything Seasoning (I used Olde Thompson Everything for Bagels and More)
  • 1tsp. Lemon Juice
  • Salt

Directions:

  1. Slice your roll in half, and toast the bread.
  2. Cook the bacon.
  3. Cut the avocado in half, remove the pit, scoop the avocado out of the skin, and place in a bowl. Add the lemon juice and mash with a fork. Add a pinch of salt and stir to distribute the salt into the mashed avocado.
  4. Place a frying pan over medium heat, crack the eggs and add to the pan, and fry to preference (I left my yolks a little runny).
  5. Crumble your cooked bacon.
  6. Top your toast with a thick layer of mashed avocado, add the crumbled bacon, place a fried egg on top of each piece of bread, and finish by sprinkling Everything Seasoning over each piece of toast.
  7. Serve and enjoy!

Shrimp with Avocado and Mango

Once again, I found myself in need of a meal with no real plan. It was too late to go grocery shopping, but I had a fridge full of random items in front of me. I wanted something kind of summery and tropical, and had a craving for shrimp. This dish was the result. Let us know what you think.

Ingredients:

  • 15-20 medium shrimp
  • 1 Medium Mango
  • 1/2 Avocado
  • 1/4 c. Bell Pepper (chopped)
  • 1 tbsp. Cilantro (chopped)
  • 1/2 Lime (juiced)
  • Olive Oil (enough to lightly coat your frying pan

Directions:

  1. Cook the shrimp. In a frying pan, add enough oil to provide a light coating to the bottom of the pan. Peel and clean the shrimp, add to frying pan, and cook over medium heat until the shrimp are pink.
  2. Place a few paper towels on a plate, place the shrimp on top, set aside, and let cool while you prepare the rest of the ingredients.
  3. Chop the Avocado, Mango, and Bell Pepper into chunks (about 1/2 inch in size)
  4. Finely chop the Cilantro.
  5. Cut the shrimp into smaller pieces or leave whole (whatever you desire) and add to a large bowl.
  6. Add the Avocado, Mango, Bell Pepper and cilantro to the bowl.
  7. Add the lime juice, and stir until fully combined.
  8. Serve and enjoy

This can be served with many sides or used to top many dishes. I chose to serve mine over rice, but next time I’m thinking about placing it over a bed of arugula to make a salad.
